Hush Puppies
Yield -about 50 puppies
Ingredients
1 QUART YELLOW CORN MEAL
1 CUP WHITE FLOUR
3/4 CUP ONIONS (Minced fine)
1/2 BUNCH PARSLEY (Minced fine)
1 -1/2 CUPS MILK
1/2 CUP HEAVY WHIPPING CREAM (Whipped foamy)
5 WHOLE EGGS (Beaten)
1 TBSP GRANULATED GARLIC
1 TBSP BAKING POWDER
1 TBSP SUGAR
1 TBSP SALT
LOT PEANUT OIL
Method
Mix all ingredients in a large stainless steel mixing bowl. Place
the bowl in the refrigerator and allow the seasonings to blend
(minimum one hour).
Use a large Dutch oven and fill to 2/3 full. Use a minimum of 3/4
gallon fresh peanut oil and preheat the oil to 350F. Next use two
tablespoons and dip about 1 to 1-1/2 tablespoons of batter, use
the other spoon to push the batter off of the spoon and into the
hot oil. Fry the puppies about 3 -5 minutes or until golden
brown. As the puppies cook they will float and allow themselves
to be turned.
Alternate Method
A tablespoon of granulated onion can be added to or substituted
for the garlic. Or you can substitute the granulated garlic for 2
tablespoons of Roasted Garlic Puree.
Plate Presentation
Serve in a large preheated earthen bowl or a 2 hotel chafer
insert.
Chef's Notes:
An old wifes tale has it that corn meal dough was fried and
brought to the dinner table with the Master of the House other
food. During the meal, the fried balls were fed to the dogs to
keep them quiet and happy during their masters feeding.
Hence the term, Hush Puppies.
