Custom Catering's
VEAL MEATBALLS
Yield: 2 sheetpans
Ingredients:
10# Ground Veal
4 Green Peppers,diced
4 Onions, Diced
4 T. Parsley, chopped
2 Eggs
1 Cup Parmesan Cheese
5 Cup Bread Crumbs
1 Tablespoons Garlic, Chopped
Salt and Pepper To Taste
Method:
Combine all ingredients in mixer, mix to incorporate,
roll into 1.25 oz. balls, line up on a sheetpan, bake in 350
oven, cool. Use in pasta's or as appetizer.
Alternate Method:
Chef Zita has said that he sometimes uses white wine to
deglaze the sheet pans to start a gravy and he also has mentioned
that seasoned bread crumbs can add a little spice to the dish.
